My Story:
I looked at the perfectly round truffle covered with decant coco powder from Belgium. I popped it into my mouth and thought, Oh my, this is not what I had in mind. How could anyone think this is chocolate. It isn’t even good!
I had to be polite to my host and I tried to be a good guest and act like I loved it just a little. As I swallowed I said the only positive thought that came to my mind, “That is very different than a Dove bar. It would take a little getting used too.”
My thoughts about 25 years ago was, I could never in a million years like that stuff, how could any one? I was wrong, I did learn to love it and the saddest part is all of the chocolate I used to eat I now realize how truly immature plates it was designed for giving only a “big bang“ with not much substance behind it. I could have thrown my money on the ground and have gotten as much benefit. Well at least if I had thrown my money on the ground someone else could have found it and used it. What a waste.

There is hope today there is a new movement to developed the taste of the finer things in life like the true tastes of chocolate, not just sweet and chocolaty. Not just a “fake chocolate” but one that actually uses 100% high quality cocoa. The new book Raising the Bar: The Future of Fine Chocolate by Jim Eber and Pam Wiliams gives a new depth to the taste of chocolate for any one to discover. From sweetness to bitter sweet to savory to fruit flavor to acidic flavor. Real flavor most American chocolate hasn’t provided until now. We are voting with our dollars that we want more than just a 20% real chocolate. It is out there, the new American chocolate some for as much at $18 per bar.
Final words:
If America is ready for the grown up taste of designer chocolate what else will our dollars bring to us? This is a start to a change that will happen. Be brave try something new even if it cost a few more dollars. Don’t be fooled by a "faked real", it is just not the same.
Or be like me create a new chocolate that is equally high quality and only cost a few dollars. It is one of the highlights of my day each day I taste its bold creamy chocolate flavor melting in my mouth. Maybe my chocolate will be coming to a store near you someday or maybe not. A girl can dream can’t she.
What we buy tells all who we are. Vote with your dollars to create the world we can all live in. We are in this together. We are stronger together.
